This morning I fancied a proper breakfast and so made a syn free breakfast thanks to an image on Pinterest. I got to use my silicon cupcake cases for the first time. You place bacon inside first then a spoonful of beans and then crack an egg ontop.
Bake in the oven for 25 minutes at 200C
No need to cook bacon first and I used medallions so I don't need to bother trimming off the fat, you could however have 'proper' bacon and syn the fat.
The only thing annoying is that I always overspill the egg white so my white cooked on the tray as you can see from the picture lol, probably need bigger cases.
